Description

A delightful dish that captures Mediterranean flavors with zesty lemon and fresh herbs, perfect as a side for various main courses.

Ingredients

Scale
  • 1 cup long-grain white rice, rinsed
  • 2 tablespoons olive oil
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 2 cups chicken broth (or vegetable broth for a vegan option)
  • Juice and zest of 1 large lemon
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh dill, chopped (optional)
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Prepare Your Ingredients: Gather and prepare all your ingredients – rinse the rice, chop the onions, mince the garlic, and zest and juice the lemon.
  2. Heat the Olive Oil: In a medium saucepan, heat the olive oil over medium heat for a couple of minutes.
  3. Cook the Onion: Add diced onion to the saucepan and sauté for about 3-4 minutes until translucent.
  4. Add the Garlic: Stir in the minced garlic and cook for an additional minute.
  5. Toast the Rice: Add the rinsed rice, stir well, and toast lightly for about 2 minutes.
  6. Incorporate the Liquid: Pour in the chicken broth and add lemon juice and zest. Bring to a rolling boil.
  7. Simmer the Rice: Once boiling, reduce to low heat, cover, and simmer for 18-20 minutes until rice absorbs all liquid.
  8. Let It Rest: Remove from heat, keep covered for an additional 5 minutes to steam.
  9. Fluff and Serve: Fluff the rice with a fork, fold in parsley and dill, season with salt and pepper, and serve warm.

Notes
