Instructions
- Prepare Your Ingredients: Gather and prepare all your ingredients – rinse the rice, chop the onions, mince the garlic, and zest and juice the lemon.
- Heat the Olive Oil: In a medium saucepan, heat the olive oil over medium heat for a couple of minutes.
- Cook the Onion: Add diced onion to the saucepan and sauté for about 3-4 minutes until translucent.
- Add the Garlic: Stir in the minced garlic and cook for an additional minute.
- Toast the Rice: Add the rinsed rice, stir well, and toast lightly for about 2 minutes.
- Incorporate the Liquid: Pour in the chicken broth and add lemon juice and zest. Bring to a rolling boil.
- Simmer the Rice: Once boiling, reduce to low heat, cover, and simmer for 18-20 minutes until rice absorbs all liquid.
- Let It Rest: Remove from heat, keep covered for an additional 5 minutes to steam.
- Fluff and Serve: Fluff the rice with a fork, fold in parsley and dill, season with salt and pepper, and serve warm.
